Welcome to Chef Gilles Sensei's culinary corner! Today we're indulging in a versatile vegetable – the humble cabbage – by creating two distinct salad variations: a traditional, tangy delight and a creamy, sumptuous twist. Whether you prefer the refreshing sharpness of vinegar or the rich caress of mayonnaise, these recipes cater to your cravings. Let's dive in!
Ingredients:
For the Traditional Cabbage Salad:
- 1/2 green cabbage
- 1 carrot
- 200 ml vegetable oil
- 150 ml white vinegar
- 15 ml sugar
- 15 ml dried oregano
- Salt and pepper to taste
- A handful of fresh parsley, finely chopped
For the Creamy Cabbage Salad:
- 1/2 green cabbage
- 1 carrot
- Mayonnaise to taste
- Salt and pepper to taste
- A handful of fresh parsley, finely chopped
- Optional: Ranch or Caesar dressing, and bacon bits for a gourmet twist
Instructions:
Traditional Cabbage Salad:
1. Slice the cabbage in half, remove the core, and the outer leaves.
2. Using a mandolin, thinly shred half of the cabbage.
3. Peel and grate the carrot, then mix it with the shredded cabbage.
4. Finely chop the parsley and add it to the cabbage-carrot mixture.
5. Pour 150 ml of white vinegar and 200 ml of vegetable oil into the salad, and season with salt, pepper, and sugar.
6. Sprinkle the dried oregano and give everything a thorough mix.
7. Your traditional cabbage salad is ready to be served. Enjoy its crisp, tangy flavors!
Creamy Cabbage Salad:
1. Repeat the first step of the traditional salad by prepping the cabbage.
2. This time, instead of shredding, use a grater with large holes to grate the cabbage.
3. Squeeze the grated cabbage to remove excess moisture and place it in a fresh bowl.
4. Peel and grate the second carrot, and add it to the bowl with the cabbage.
5. Chop the parsley, being careful to keep your fingers away from the knife's edge, and add it to the cabbage and carrots.
6. Spoon in the desired amount of mayonnaise, season with salt and pepper, and combine everything well.
7. Optionally, substitute mayonnaise with Ranch or Caesar dressing and add bacon bits for a creamy cabbage salad that's rich and flavorful.

Equipment: Knife, Mandolin (optional), Grater, Mixing Bowl
Cooking Tips: Be sure to emulsify the dressing by whisking the oil into the vinegar slowly for the traditional salad. For the creamy salad, make sure to press the cabbage well to prevent a watery consistency.
